The result has been frustration with basic cutting when cooking. Hubby researched knife sharpening in the area and found Bertarelli. We called and they advised we could drop the knives off that day and they would be able to get to them...."

Japanese knives should have a 15 degree bevel, and what came back was +25 degrees, and the bevels are now asymmetrical. I can tell because there is significant resistance on the knife now compared to another unsharpened one. It takes more wrist work and pressure to cut through even an onion.
