"I wanna preface this by saying I almost never write reviews. My experience at carbon knife co was genuinely so fantastic that Im writing one for them. Today I walked into their storefront, explained my needs in a knife, and my budget. The staff member who helped me pick one was incredibly knowledgeable and not pushy. I also brought my current main knife for reference when picking my new knife and the staff member offered to give it a quick sharpe..."

"A Truly Amazing Experience I recently purchased a knife (Yoshikane Hamono SKD 210 Kiritsuke with a burnt chestnut handle) from Carbon Knife, and I can honestly say it was one of the best experiences I’ve ever had with ANY company. Despite being across the country in Florida, everything from start to finish was handled with such care and warmth that I felt like I was right there in their Colorado store. Given that each handmade knife is unique a..."

"Really an exceptional store. Worth driving to and supporting. Great staff, great products. From handmade, unique Japanese chef knives made by smiths who have been making them for decades... to one of a kind pieces created by local talent. The best part of this store is that you can see and handle the knives. Crucial. Beyond crucial if you are spending over $200, over $300, and up on a specialty knife. Why in the world would you not see how it lo..."

"Carbon is such a lovely gem for culinary enthusiasts! I stopped in to have a knife repaired after accidentally chipping it, and for just $20, they restored it beautifully. Beyond their knife sharpening service, the shop boasts an exquisite collection of Japanese knives, with knowledgeable staff available to guide you toward the perfect new addition to your kitchen. Their selection of kitchen tools and accessories is equally impressive—ranging fr..."

"I bought a beautiful knife from Chef Elan as a birthday gift for my husband. He was helpful and informative, but didn't try to oversell. It was a great experience and the knife is perfect. Just recently, I decided I needed to know how to sharpen it. So I took the class he offers, and what a great experience. I no longer feel intimidated about sharpening my knives. Elan was so thorough, with hands-on practice and individual feedback. The class wa..."

"Wow! Don’t hesitate to buy from these guys! Truthfully, I bought from Element because they had a sale. It is my first “premium” knife. The order showed up 2 days earlier than expected. It was wrapped in tissue paper with a thank you sticker. Once unwrapped there was a hand written thank you card, origami, a purchase summary and even a mint! My next purchase of a high quality knife will be from these guys for sure!"

John Symonds

"Just attended Chef Elan’s sharpening class, outstanding! I have been sharpening for a few years and could produce a respectable edge ,however , attending Chef Elan’s class has taken my skills to a new level. Great coach, attentive, patient, and knowledgeable. Sharpening a knife or any edge can be frustrating and even somewhat daunting for a beginner. I can assure anyone considering taking this class will be well rewarded and leaving with the conf..."

"If there was ever a guy, you wanted to see succeed with a vision to build a company like this, it would be this place and this guy. Elan had a way with teaching knife sharpening that you could tell was informed by years of thinking about the pedagogy of the skill. He clearly has a passion for selling well reputed knives, as well as sharing community and learning around knife skills. Knives are often forgotten but the right knife can build wonde..."

"Have you had your knives sharpened recently? If you haven't, you absolutely should have them sharpened here. Brought in my knives - not their brand - and they now feel like new and wow, what an amazing gift to be able to prep and cook food for my family with sharpened knives! Who knew? They wrapped them up well in a safe sleeve with thick (fun) promo paper and it was a crazy fast turnaround time, which is fantastically better than sending the..."

"Meat Cleaver that was gifted to me could be sharpened. This 6 inch model has a dull blade to crush through bones, but I don’t often have a need to use the cleaver in this manner so I asked if it could be sharpened. Well yes it could and they did a FANTASTIC job re-purposing this cleaver into a very sharp kitchen tool that I use almost daily. This cleaver sat in a drawer for years until I visited New West Knifeworks and learned the possibilities t..."

"I recently visited the New West KnifeWorks store in Cherry Creek to have my two Japanese knives sharpened. One of the knives had a chip in the blade, and I was unsure if it could be repaired. To my delight, not only did they sharpen both knives, but they also fixed the chipped blade, making it look and perform like new again. The turnaround time was incredibly fast—less than 24 hours! The quality of their work and the level of service provided w..."

"This was my first time at this store. I went in to ask them for assistance about a product I didn’t even buy through their store. Typically, employees will just push you away in that situation but Mike and Will took the time to educate me and treated me like I was one of their regulars. I looked around and ended up purchasing something and will definitely be back to give them my business. This store is great for everyone from someone looking for ..."

"A long-time family business. The bothers now are George and Gus Dallagiacoma. They do beautiful work on knife sharpening. Very hard to get such edges on your knives at home, and their prices are very reasonable. They've taken care of my knives for maybe 25-30 years. They sell all kinds of knives and commercial kitchen equipment. They are professionals, and friendly. Bought this knife there. Edge is polished and ultra sharp."

Rodney Horton

"Fantastic work, quick turnaround, great customer service, and reasonable price! We had our 1st experience w Brother’s Cutlery in May ‘23 when we took 8 kitchen knives in to be professionally sharpened. The phone and in-person contacts were friendly and accurate, shop was easy to find, prices modest, only took a few days, and sharp knives when done. We highly recommend!"

Go Pogo

"George took a look at my two Henckels knives that needed a lot of help. He suggested a hollow re-grind and quoted a week turnaround time. Hours later, George called to say they were finished. Because I was already on my way back home out-of-town, he arranged to ship them. The knives arrived days later and are at least good as new. Trust Brothers Cutlery for all your sharpening services. Thanks you guys!"

Vack Lonz

"I'm sorry, but these guys come out to my work and sharpen all blades etc in the kitchen. At first I was ok w that. Come to find out, they use a grinder and have absolutely ruined a few of my knives overtime including a $300 Wustof and a spyderco folder. Basically, they just keep grinding away until eventually the knife is misshapen. They'll just keep grinding serrateds until there are no more. They still come in, but most of our staff keeps ther..."

"I brought in an entry level Wusthof knife (nothing special, I think I paid $40 in 2018) and a pair of scissors from Home Depot that I messed up while cutting a bike tire (like a moron). For $7.50, the knife is the sharpest thing I've ever handled. No joke I cut myself with it twice already. I'm scared of this thing now. The scissors were just okay, they didn't get all of the... knicks?... out of it. But they're better than they were before. My fa..."

"Used The Knife Guys for their knife sharpening services and picked up some cooking supplies when I swung through as well. A+ service on the knife sharpening - I brought 14 knives in on a Wednesday evening and all were razor sharp and ready before lunch on Thursday. Additionally, as I'm clueless on this sort of stuff, they shared some interesting facts on a set of knives that have been hand-me downs in the family that I wouldn't have known other..."

"If you like being treated like you don't deserve to share the same space as the knife god who can't be bothered by mere mortals, this is the place for you. Asked the guy "how's your day going?" Couldn't be bothered to respond like a human being. Then I asked, without seeing the huge drawer of Japanese knives that was out of view, if they sold the display knives and his response was "No, we just like to go look at them". "This place is awesome. The selection is wild — I’m talking chef’s knives, camping knives, pocket knives, knives I didn’t even know existed but suddenly felt like I needed. Whether you’re slicing tomatoes or prepping for the zombie apocalypse, they’ve got you covered. Prices are actually really reasonable. I went in expecting sticker shock, but walked out with a great knife and didn’t feel like I needed to refinance my house. Definitely some high..."

"Great selection of kitchen knives and very helpful staff who let me hold and test out several knives to figure out what was best for me. They also have very reasonable sharpening prices. Would recommend to anyone looking for new kitchen knives or cookware and wants to support a local business."

Runnin

"For legal reasons I took a Chris Reeve large Inkosi to them to be reprofiled to a 3.5 inch blade. It's a $500 pocket knife that I didn't want to mess up myself, so I trusted them to do it for me. He did a great job. Far better than I would've done. Thanks again!"

Tyler M

"Couldn’t meet his own 48 hour turnaround time, to sharpen 2 small knives. Had to come back twice during a blizzard because they’re closed the entire next week. He discounted the 3” pairing knife as consolation… thanks. Sharpening was nothing special. Could have spent the same amount for a plastic sharpener on Amazon and had a similar result. I do not recommend Mountain Life, and I will not be back."

"Absolutely great experience from start to finish. The first time I stopped by was to sharpen my pocket knife. Thrilled with the professional sharp edge, I returned shortly after with the rest of my collection. Every time I have been in, Terrie is there to greet me with a positive attitude and a smile. David does an excellent job at putting a very sharp edge on everything I bring in. It only takes a couple minutes per knife and is approximately $3..."

"One of my wife's favorite cooking shop to go to. They have a vast variety of knives and we could find a slicing knife within our price range that wasn't bendable. They even sharpen it when you buy it, even though the manufacturer usually does. Obviously, they care. It's nice to see that."

Dominic Fabela

"Great place friendly and very helpful staff, nice sharp knifes and everything you need for your restaurant and or food truck. They also have a machine shop next door where you can get all your stainless steel tables and prep tables . Five star for sure and highly recommended"

Josh Simpson

"Witnessed one of their drivers behaving like a manic today on Federal Blvd, going about 65 mph in a 35mph zone and passing people on the left in a turn only lane. Tried to call and inform them but the girl at the front desk just called me rude and hung up on me when I tried to describe the driver. Here’s a photo of the vehicle."
